Savvy Cuisine: Gingerbread Cake for the Holidays

Gingerbread just screams Christmas, but who has the time (or patience) these days to construct a full-size gingerbread house? Well, this holiday season you can enjoy the taste of grandma’s traditional gingerbread without losing a whole day on one dessert with this tasty recipe.

Ingredients:

  • ¾ cup shortening
  • 1 cup brown sugar
  • 1 cup molasses
  • 2 eggs
  • 2 ½ cups flour, sifted
  • 2 teaspoons baking soda
  • ½ teaspoon nutmeg
  • 2 teaspoons ginger
  • 2 teaspoons cinnamon
  • Pinch of salt
  • 1 cup sour milk

Preheat oven at 325°. In a bowl, mix shortening, brown sugar, molasses, and eggs. Sift remaining dry ingredients. Alternate dry ingredients and milk. Grease loaf pan (13X9). Bake at 325° for 50 minutes. Serve with whipped cream topping.
